2 jalapeno chilies, finely chopped
16 oz. can creamed corn
1/2 tsp. baking soda
1/2 tsp. salt
1 tbsp. sugar
2 eggs
3/4 c. buttermilk
1/3 c. oil
1 c. grated longhorn cheese
2 c. yellow cornmeal
Preheat the oven to 350°F.
Grease a 9 x 13 baking pan. In a large bowl, mix jalapenos and creamed corn. Mix in the dry ingredients first and then add the wet ingredients until mixed together well. Pour the batter into the greased pan and bake for 35 minutes.
