Cornbread Muffins

8 ingredients

1 c. flour, sifted
2 tsp. baking powder
2 tbsp. sugar
3/4 tsp. salt
1/3 c. vegetable oil
1 egg, beaten
3/4 c. milk
2/3 c. yellow corn meal

Combine all dry ingredients and mix together. Next, add in wet ingredients and mix until combined. Do not overwork the mixture. Spoon mixture into muffin cups until 2/3 full. Bake at 400 for 20-25 minutes.
