3 firm green tipped bananas
4 eggs, separated
1/4 c. flour
1/2 tsp. salt
Oil for frying
Peel and split the bananas lengthwise. Cut each in half and dip them in lemon juice. To make batter, mix remaining ingredients and mix well. Drop the banana halves into the batter one at a time. Pick up with a spoon and carefully lower into 1 inch of hot oil. Cook over medium heat, turning almost at once. Cook until brown on both sides.
