Thai Peanut Sauce

8 ingredients

4 teaspoons vegetable oil
1/2 cup minced red onion
2 tablespoons minced garlic
1/2 teaspoon hot chili pepper
2 tablespoons sugar
2 tablespoons vinegar
1/3 cup peanut butter
1 cup of water

In a blender, combine oil, onion, garlic and chili pepper and blend for 1 minute

Pour into a saucepan and place over low heat and simmer for 10 minutes. Add peanut butter and mix well.

Add water and let simmer for 10 minutes or until thickened.

Stir in vinegar and sugar; continue to simmer for 2 more minutes.
