Pita Bread

8 ingredients

2 C. plus 1 tablespoon all-purpose flour
1 C. pastry flour
1 C. warm water
1 tsp. active dry yeast
1 tbsp. applesauce
1/2 tsp. salt
1 1/2 tsp. sugar
olive oil

Dissolve the yeast and sugar in the warm water.

Combine all of the dry ingredients and add in the yeast mixture and the applesauce and knead.

Roll out into a rope and cut into 8 pieces. Shape each piece into a ball and roll out until it's approximately 7 inches in diameter.

Heat olive oil in a skillet over high heat. Just before oil begins smoking, place one pita in the pan and cook for a few minutes on each side. When small brown spots begin to form, they are done. Don't worry, the pita should like a tortilla when you're done. Put in a plastic bag once it has cooled.
