Mango Chutney

6 ingredients

6 firm half-ripe mangoes, peeled and diced
1 c. cider vinegar
1 c. brown sugar
2 tbsp garlic, minced
1 small piece of ginger, peeled and thinly sliced
salt and pepper to test

In a large sauce pot, combine all ingredients and bring to a boil. Reduce the heat to low, simmer for 25 to 30 minutes, stirring constantly so it does not stick to the bottom. Serve cold.
